The story
For more than fifty years, the Rayón Gómez family has run Hostería de los Palmeros in Frómista, a town in the heart of Tierra de Campos, Palencia. The restaurant occupies a building with deep roots: originally a pilgrim hospital on the Camino de Santiago, it was converted into a restaurant in 1968 and has been a family project since 1978.
The kitchen, led by chef José A. Rayón, focuses on traditional Castilian cuisine brought up to date. The approach is direct: select the best seasonal products from the region and treat them with respect. Vegetables from Palencia’s market gardens, mushrooms from the Picos de Europa, lechazo (suckling lamb), pigeons, partridges, duck, and woodcock are all sourced personally by the chef. Fresh fish arrives three times a week from the ports of A Coruña and Santander. Dishes are cooked slowly, allowing the quality of the ingredients to speak.
The dining rooms are welcoming and classic, designed to make guests feel at home. The wine list is one of the most extensive in the region, with over five hundred references covering Spain’s best wine regions, with a particular focus on local wines.
This commitment to honest, well-executed cooking has earned Hostería de los Palmeros a Michelin Recommended award and recognition as Best Traditional Restaurant 2024 by the Academy of Castile and León Gastronomy. It remains a reliable stop for travellers, pilgrims, and locals alike.
