The story
"Root that burns, flavor that commands" – this is the guiding spirit of COME by Paco Méndez in Barcelona. The restaurant earned a Michelin star in 2026 for its precise, contemporary cuisine that draws on the chef’s Mexican heritage without being bound by it. Méndez describes Mexico as a conceptual origin, the emotional substrate of his cooking, but the kitchen has evolved through contact with other territories, products, and culinary languages.
The menu at COME is a tasting journey built around seasonal, local Mediterranean ingredients. The kitchen works with produce from the nearby land and sea, respecting the natural rhythm of the environment. Mexican influences appear as subtle nods – a mole here, a totopo there – never as impositions. This fusion is not a mash-up but a dialogue: the finest totopo (crisp corn tortilla) comes with cured tuna and mole, while a “cappellaccio” of black beans brings Italian pasta technique into the conversation. The progression moves from botanas (snacks) like an olive “from the cantina” and peanut marzipan, through antojitos (little cravings) such as a cold-hot margarita and a beetroot meringue, to main moments like the Ritual del taco: Wagyu, root purée, and chilhuacle red chile.
The restaurant offers a single tasting menu at 185 euros per person, with optional wine pairings. The sommelier team has curated a selection of small producers and singular projects, complemented by a bespoke cocktail program designed to amplify each dish. There is also a non-alcoholic pairing made from seasonal fruit waters, house ferments, and reimagined classics – a sophisticated alternative in its own right. The atmosphere is refined but relaxed, with smart-casual dress, wheelchair access, and a private room for events. COME is open for dinner Monday through Friday, with a lunch service on Monday. The experience runs about two to three hours, meant to be savoured without rush.
Paco Méndez’s roots in Mexican cuisine are part of his identity, but COME is not a Mexican restaurant. It is a contemporary kitchen that has transformed through contact with the Mediterranean, where tradition and technique meet to create something new.
