Xavier Pellicer offers three distinct menus that change strictly with the seasons, following the rhythm of nature and the principles of Ayurveda. The vegan menu is the purest expression of the earth — 100% plant creativity without sacrificing intensity or technique. The vegetarian menu adds organic dairy and eggs for balance. The omnivore option introduces sustainable animal protein, always in support of the vegetable excellence. All ingredients come from local farmers who treat the soil as a living organism.
Chef Xavier Pellicer trained under legends Jacques Maximin and Alain Dutournier, and led iconic kitchens at Can Fabes and ABaC. But his true voice emerged when he began listening to the land. Today, his restaurant is a global reference for Healthy Kitchen, repeatedly named the Best Vegetable Restaurant in the World. His work has earned the Premi Nacional de Gastronomia d’Autor 2024 and the Premi Barcelona Sostenibilitat 2025. The Michelin guide has also recognised the restaurant, awarding it a Recommended distinction in 2026.
