The story
Raúl Resino’s path to the kitchen began in 1993, when he fell into the trade and fell in love with it. Starting as a dishwasher, he worked his way up with no grand plan—only an obsession to learn the craft. But his true education came from the sea. As a child, he would spend hours fishing and diving, and that connection to the Mediterranean has never left him. Today, he calls himself a “cocinero pescador”—a cook who is also a fisherman.
The restaurant’s philosophy is simple: “We cook as we think, we do not think about what we are going to cook.” Every day, the menu is shaped by what is fresh from the local fish market and the seasonal produce of the land. The cuisine is 100% focused on the sea and the traditions of the fishing community, working exclusively with local fish and shellfish and Km 0 ingredients. This commitment to sustainability and locality is at the heart of every dish.
In the dining room, Elia Cerdá Rico, Raúl’s wife, leads the service as head of the room. Together, they form a tandem that works to ensure every guest leaves happy.
