The story
In 2019, chef Aitor Rauleaga opened his own restaurant just steps from the Jardines de Albia in central Bilbao. The space is a deliberate move away from culinary artifice. Here, the philosophy is clear: "the product is king and tradition is the rule." Rauleaga's cooking is built on the nobility of seasonal ingredients, the sincerity of classic Basque dishes, and a service style that is warm and direct.
This is Basque cuisine stripped of unnecessary tricks. The menu changes with the seasons, drawing on traditional recipes that prioritise deep, honest flavour. A particular focus is placed on spoon dishes — the hearty, slow-cooked stews and broths that are the soul of Basque home cooking. Every plate appeals to memory, executed with skill and a distinct personality. The wine cellar is described as fresh and surprising, selected to complement the food without pretence.
Aitor Rauleaga's commitment to this vision has earned the restaurant a place in the Michelin guide, where it is recognised as a Recommended address. It is a testament to a kitchen that values substance over showmanship, offering a genuine taste of Basque culinary heritage in the heart of Bilbao.
