The story
At Islares, the team’s focus is on the gastrocultural and historical heritage of the north of the Iberian peninsula. The kitchen pays homage to the region’s stews, traditions, territory, and nature, using recipes and techniques that are part of the local culture. Two menus are designed to cover the entire territory, shaped by the products of small artisans.
Nature and its temporality, culture and its markets, and traditions and customs guide the preparation of each menu. The restaurant leaves its kitchen to know the regions and their products, talking directly to small producers to fill their pots. The traditional recipe book enriches the offering, always seeking maximum flavor and quality.
The team looks for the best product from the north of the Iberian peninsula, giving small producers and processors the prominence they deserve. Their work requires courage and effort, and Islares believes it should be recognized and rewarded.
