The story
Daniel Lomana honed his skills alongside top chefs in London, Spain, and Japan. At KUMA, he and his team fuse the most traditional and pure Japanese cuisine with a renewed, original touch. The restaurant’s philosophy is built on "cariño y respeto por el producto"—affection and respect for the ingredient—delivering dishes that are both surprising and refined.
KUMA offers a single tasting menu, priced at 110 euros, served Tuesday through Saturday. The menu changes with the seasons, always using natural, fresh products. Recent dishes include pan de coca with tomato and chopped tuna, sashimi of wild salmon with its own caviar, and a selection of nigiri such as toro flambé with Dijon mustard. The meal finishes with a choice of dessert. A gift version of the menu is also available, valid for six months.
In 2026, KUMA earned a place in the Michelin guide, a recognition of its consistent creativity and quality. The restaurant sits in the heart of Bilbao, at the corner of Ercilla and Ajuriaguerra streets, a short walk from the Moyua metro station.
