Chef David García, a Bilbao native who already holds a Michelin star and three Repsol Suns for his work at Corral de la Morería, serves as the restaurant’s gastronomic director. Day-to-day, head chef Baladi Goiburu Leis leads the brigade, executing a cuisine firmly anchored in seasonality and respect for the product. The result is a concise, evolving menu that highlights the purity of ingredients, often transformed by fire. A carefully selected wine list of singular bottles accompanies each passage.
