Los Fueros, the oldest restaurant in Bilbao, has been serving traditional Basque cuisine in the heart of the Casco Viejo for generations. The restaurant’s commitment to honest, high-quality cooking has been recognised with a Michelin Bib Gourmand award, a distinction that highlights good quality, good value cuisine. This recognition aligns perfectly with Los Fueros' own approach: offering a menu of market-driven dishes and well-loved classics without unnecessary fuss.

The kitchen’s spirit is best captured in their "Menú Bilbao de Toda la Vida" (A Lifetime of Bilbao Menu), a degustation that recreates how the city has always eaten. The meal begins with Bilbao-style aperitivos, including ensaladilla rusa, and moves through dishes like Cantabrian anchovy empanada, salt cod buñuelos, and seasonal Tudela vegetables prepared "al estilo de Los Fueros." Grilled white gamba from Huelva, fried hake with roasted pepper mayonnaise, and a Txerri pork rib with truffled mushroom duxelle follow, finishing with a brioche toast soaked in milk. It is a direct, delicious journey through the city's gastronomic heritage.
