A Fusion of Peru and the Basque Country

In the Deusto neighbourhood of Bilbao, Waman offers a dining experience that bridges two worlds. The restaurant’s philosophy is clear: a fusion of Peruvian and Basque cultures, creating what they describe as an explosive, unique gastronomic contrast full of flavour. Here, the richness of Peru — the country that saw them born — meets the excellence of products from the Basque Country, the region that opened its doors and became home.

The Menus: Inti and Pachamama

The kitchen expresses this duality through two tasting menus. The Menú INTI ("Raíces y Altura") begins with a braised oxtail with locro de zapallo and quinoa, followed by bonito prepared in a Bizk-Andina style with ear and callo. A fish consommé chilcano and a creamy parmesan croquette lead into a tiradito of lemon fish with a leche de tigre of yellow ají and rocoto.

The Menú PACHAMAMA offers a different journey: marinated sardine with a tomato bed, nectarine and almond leche de tigre, followed by a "Lomo No Saltado" — a tartar of beef sirloin with lomo saltado juice and latxa sheep cheese cream.
