The story
Just outside Burgos, on the road to Madrid, Abadesa is an asador built around a single, honest principle: respect for the product. The restaurant’s philosophy is clear – “cocina sincera, sobria y emocionante, donde cada bocado hable del respeto al origen y del amor al oficio.” This is cooking that lets the fire and the ingredient speak, with no unnecessary flourishes.
Guillermo Martínez de Marigorta, named Maestro Parrillero España 2024, leads the grill. Alongside María Rodríguez Ruiz de Linares and a young, dynamic team, he oversees a menu that revolves entirely around the embers. The space itself is modern and welcoming, designed to make guests feel at home while they experience what the restaurant calls a “culto a la brasa” – a devotion to the grill.
The Michelin guide has recognised Abadesa with a Recommended award for 2026, a nod to the precision and sincerity of its cooking. The asador menu is complemented by a carefully curated wine cellar, and the café offers a more casual setting. For those who want to linger, the on-site hotel provides 13 comfortable rooms.
Abadesa is a destination for anyone who values straightforward, exceptional grilling – where the quality of the meat and the mastery of the fire are the only stars.
