The restaurant describes itself as “the best of traditional and avant-garde cuisine,” and its menu reflects that balance. Here, you will find a carta of traditional Spanish dishes built on grilled meats and fish, stews, salt-cured fish, and conserves, all made with top-quality ingredients. The focus is on product and technique, drawing on the chef’s roots in Cantabria and his adopted home of Burgos.
Cobo Tradición has earned a Michelin Recommended distinction, a testament to the consistent quality of its cooking. Beyond the main dining room, the restaurant also offers the “Mesa del Chef” (Chef’s Table) – the most exclusive space in the house, seating up to twelve guests. In this private room, chef Miguel Cobo personally attends to diners, creating custom menus for an intimate, high-end experience.
