The story
On Rúa Príncipe in Cambados, a two-century-old stone house has been given a new, thoroughly modern life. Inside, A Taberna do Trasno offers a dining experience built on quality market ingredients and the singular flavours of a wood-fired oven. The result is a style of cooking that is at once simple and deeply distinctive, earning the restaurant a Michelin Bib Gourmand award for good quality, good value cooking.
The chef-proprietor brings an unusual culinary lineage to this corner of Galicia. Born in Bilbao, he learned the trade in the family business, with his mother as his first great teacher. Twenty years in Lanzarote followed, where he absorbed the best of Canarian and Basque traditions. Since arriving in Cambados in 2007, he has blended those influences into a menu that is best described as fusion cuisine. Michelin’s inspectors note a varied carta where traditional Galician dishes sit alongside more modern creations, with a dedicated section called “Un paseo por el mundo” (A walk around the world).
The wood-fired oven is the heart of the kitchen, lending its unmistakable aroma to the cooking. Standout dishes, as highlighted by the guide, include the grilled octopus on a creamy potato mash and the superb grilled Burela hake with clams and an Albariño reduction. The setting is as compelling as the food: a beautiful historic exterior that gives way to a sleek, contemporary interior, creating an atmosphere that feels both grounded and fresh.
