A Family Home

Casa Marcial is not a restaurant that was built from scratch; it grew out of a family home in the hamlet of La Salgar, just outside Arriondas. In 1993, the Manzano siblings—Sandra, Esther, Chus and Nacho—opened the doors of the house where their parents had long served meals on request and run a small bar for neighbours. That sense of welcome, learned from their father, and the recipes passed down by their grandmothers, remain at the heart of every meal.

The kitchen is driven by a deep respect for nature and local producers. “Our environment, our cuisine, our home” is not a slogan but a lived conviction. The cooking is profoundly Asturian, drawing from the mountains, the meadows, and the Cantabrian Sea that shapes the region’s larder.

The Nordeste Menu

The current tasting menu is called El Cachuchu — named after the north-eastern wind that clears the sky and sweeps through the places the Manzanos love most. It moves from sea to mountain, with dishes that reflect the wild generosity of Asturias. A creamy ham croquette opens the meal, followed by a torto de maíz — a corn flatbread topped with a scramble of Cabrales cheese and onion. Then come live Norway lobster, grilled peas with hake essence, trout in the aroma of its habitat, and a sequence that includes wild boar and its wreckage (fabes, turnip, and corn), grilled grouper with herb sauce, and a mother-style stewed chicken that speaks directly to family memory.

Desserts are equally grounded: butter ice cream with cider vinegar grounds, a “Queen of the Meadow” tartlet, and a playful exploration of corn in fresh, fermented, and roasted forms with mole and chocolate.

Recognition and Place

That this deeply personal, place-driven cooking has earned three Michelin stars is a testament to its integrity. The stars are not an end in themselves but a reflection of decades of honest work in the same stone house, surrounded by the same valleys and producers. Dining here is an immersion in Asturian identity — not performed, but lived.
