The story
“De dispensar medicinas, a proveer felicidad” — from dispensing medicines to providing happiness. That is the motto of La Rebotica, a restaurant in Cariñena, Zaragoza, housed in what was once a pharmacy. The building’s original warren of rooms and nooks has been preserved, now filled with the aromas of traditional Aragonese cooking.
Nati Lacal runs the kitchen while Silvestre Cros manages the dining room. Together they have transformed the old rebotica into a place where the focus is on well-prepared food, served in a setting that feels both historic and welcoming. The restaurant’s website describes its cuisine as “traditional with a modern soul,” a promise it delivers through a menu that changes with the seasons.
La Rebotica has held a Michelin Bib Gourmand since 2007, an award that recognizes good quality, good value cooking. This long-standing recognition speaks to the consistency of the kitchen and the warmth of the service. The restaurant offers both a tasting menu and à la carte options, allowing guests to choose their own adventure through the flavors of Aragón.
The dining room is welcoming to all — children are welcome, and dogs are too, with a bowl of water provided. The menu is notably accommodating, with about 85% of dishes adaptable for gluten-free diners, including gluten-free bread and beer. The kitchen can also adjust dishes for other allergies, avoiding cross-contamination.
A typical meal might start with a classic Aragonese dish like borja with mushrooms, praised by guests for its flavor. The service is attentive and friendly, and the atmosphere is relaxed — a place where you can linger over a meal and a glass of local wine from the surrounding vineyards.
La Rebotica is open for lunch and dinner, Monday through Saturday, and closed on Sundays. It is a testament to the idea that the best cooking often comes from a place of genuine care and a deep connection to the land.
