Ángel León, the chef internationally known as the “Chef of the Sea,” leads this two Michelin-starred restaurant in Chiclana de la Frontera, Cádiz, with a quiet, rigorous commitment to the ocean. The setting, inside the Palacio de Sancti Petri Gran Meliá, looks out onto the Atlantic, and the cooking follows that same horizon.
León’s work is defined by research. He uses marine species that have historically been discarded, and has pioneered the cultivation of plants such as marine zostera. His kitchen applies ecological theory directly to the plate: maximum use of every catch, reinvention of undervalued products, and a relentless drive to reduce fishing pressure. The result is a cuisine that feels both elemental and new.
The restaurant’s base is a kilometre-zero philosophy – ingredients fresh from the day’s catch and local specialty products from the sea. The current Gran Menú Alevante is a tasting sequence of 18 dishes that moves from appetisers through main courses to desserts, with a dedicated wine pairing option. Highlights from the selection menu include periwinkle with “manteca colorá”, sea lettuce with green pepper, and a sequence centred on plancton, algae and Atlantic seaweed. The cuisine is deeply rooted in seafood, yet the range – from raw oysters in their own water to spiced “sopa moruna” with cañailla snails – shows a kitchen that understands complexity without losing clarity.
