A Tasting Menu Built on the Market

The tasting menu changes with the seasons, often weekly, based on what the market offers. Recent courses give a clear sense of the kitchen’s style: an oyster in citrus celery escabeche, cured bonito with melon and a garlicky little gem gazpacho, and a salmorejo de naranja finished with red tuna mojama and olive oil powder. There’s also carpaccio of carabineros prawns with coral oil and parsley emulsion, and slices of 100% acorn-fed presa ibérica aged in soy and ash, paired with old mustard emulsion and a picadillo.

The main course might be a selection of the chef’s daily fish with seasonal garnishes, or an onglet of Angus grilled over charcoal with a mozárabe sauce and Jerusalem artichoke cream. A crispy lasagna of beef tail with foie béchamel and Port reduction appears as a rich interlude. Dessert is a caramelized torrija soaked in orange blossom milk with noisette butter ice cream. The menu is not available Friday and Saturday lunch, and requires 24-hour advance booking by phone.
