The story
In Córdoba’s historic quarter, just steps from the Mezquita and the Roman bridge, Garum 2.1 presents itself as a bistronomic tapas bar. Chef Juan Luis Santiago and his team run a kitchen that is honest, product-driven, and deeply rooted in Andalusian tradition, yet open to renovation. The restaurant calls itself a "gastrobar" with tapas that fuse Andalusian and Arab influences — a nod to Córdoba's layered history. More than twenty references change with the season, and many come from the restaurant’s own organic garden. The creativity in the kitchen has not gone unnoticed: Santiago’s salmorejo amontillado was named the best tapa at the Córdoba Gastronómica competition, and it has become a signature. Other standout dishes include manitas crujientes (crispy pork trotters) and a surprising churro de rabo de toro con chocolate (oxtail churro with chocolate), which speaks to the playful yet precise approach.
The setting is equally inviting. A terrace, a comfortable bar area with ten tables, and a spacious, stylish dining room offer different ways to settle in. The location on San Fernando Street, known locally as "calle de la Feria," places diners in the middle of the old Jewish quarter, opposite the Cruz del Rastro.
