The story
At ReComiendo in Córdoba, Chef Periko Ortega brings a deeply personal vision to the table. The restaurant describes itself as “abanderados de nuestra tierra, portavoces de las virtudes de los productores andaluces” – standard-bearers for the land, proud ambassadors of the exceptional raw materials from the province of Córdoba. This philosophy earned ReComiendo a Michelin star in 2026, a recognition that celebrates high-quality cooking built on tradition and innovation.
The menus are named after memory itself: ReCuerdos, MeMoria, and NoStalgia. Each is a tasting journey through Ortega’s recollections, presented as modern cuisine. The ReCuerdos 26.6 menu, for example, opens with playful bar snacks – bravas, ensaladilla, calamares – before moving into dishes like Mazamorra 67, a sesame and white shrimp creation with Palo Cortado sherry, and Presa Ibérica with cauliflower, amontillado, and citrus. A dessert called Noche en los Patios de Viana layers rosemary sponge, date toffee, geranium yogurt, and toasted sheep’s milk ice cream, evoking the scented patios of Córdoba.
Ortega’s commitment to local products extends beyond the kitchen. He has been named ambassador of the III Festival Córdoba Virgen Extra, championing the province’s extra virgin olive oil – a product he calls “cultura, paisaje y memoria.” At ReComiendo, an olive oil cart is part of the experience, showcasing the liquid gold that defines Andalusian cuisine.
The atmosphere is refined yet welcoming, with a focus on storytelling through plates. Reservations are required, and the restaurant opens Wednesday to Saturday for lunch and dinner. Whether you choose the ReCuerdos, MeMoria, or the more extensive NoStalgia menu, each course is a deliberate act of remembering – a modern cuisine that tastes of place and time.
