The story
On the banks of the Guadalquivir River, steps from the Roman Bridge and the Mezquita-Catedral, Regadera is the personal project of chef Adrián Caballero. His cooking is a daily act of craftsmanship—every element on every plate is made by hand, with care and the best possible product. This philosophy of fresh, market-driven modern Spanish cuisine has earned the restaurant a Michelin Bib Gourmand, a nod to its excellent quality and value.
Caballero trained at the Escuela Superior de Hostelería y Gastronomía de Toledo and learned his craft in some of Spain’s best kitchens before taking the helm at hotels and restaurants. Regadera, which opened in 2011, is his first solo venture. “Our beginnings were humble,” he writes, “but through effort, dedication, and passion, we grew until in 2015 we opened the restaurant I always dreamed of.”
The menu changes with the seasons, but the approach stays constant: a studied carta where every dish shares equal billing, made with respect for the ingredient. The wine list, too, is personal—each bottle chosen because it tells a story. Tasting menus (from €45 to €65 per person) offer a deeper look into Caballero’s kitchen.
Regadera’s setting—in the historic centre, on the riverside—is as deliberate as its cooking. It’s a restaurant built on the idea that good food, made honestly, is worth the effort.
