An oven-candied tomato with truffled parmesan, black olives, and niboshi pork cracklings opens the journey. Then, roasted edamame with suckling-pig butter, pecorino foam, and caviar; an oyster with sea urchin bechamel and Andalusian shrimp fritter; a tuna tiradito with creamy rocoto aguachile, avocado, and pitahaya; red prawn with sun-dried tomato and annatto tartare, daikon, and blood orange vichyssoise; lamb sweetbreads with chipotle mole and lamb’s lettuce salad; cod belly with plankton pil-pil and suckling-pig trotter stew; black cod with brandade and Asturian cider beurre blanc; cured beef presa in koji with aubergines and Sichuan spinach; and a dessert of honey, mandarin, basil, and yuzu.
