The story
In the romantic quarter of San Sebastián’s old town, steps from the Basilica of Santa Maria and the curve of La Concha beach, Kokotxa occupies a setting surrounded by the city’s most celebrated gastronomic societies. The restaurant’s name itself is a nod to Basque culinary tradition, and the kitchen operates with a clear philosophy: cook what the local environment dictates, season by season.
The team composes two fixed menus built around local, seasonal produce. The Market Menu offers a sequence of snacks, appetisers, and main courses that change with the market’s rhythm—think Navarre cardoon with txipiron and almond, or the day’s catch with smoked marinera. The longer Tasting Menu expands the scope, featuring dishes such as oyster with kumquat and fennel, hamachi with sesame and avocado, chargrilled kokotxas, and Bresse pigeon with heart of lettuce, vanilla, and corn torrija. Both menus are served to the whole table, with no à la carte options.
The wine list holds 400 references, favouring small producers, and two pairing options are available. The restaurant’s commitment to a singular, ingredient-led experience is clear: no vegetarian or vegan menus are offered, and the kitchen does not adapt dishes for severe allergies or intolerances.
