The story
Perched on the hillsides of Mount Ulía, Mirador de Ulía offers a setting that is hard to forget. The dining room overlooks the Bay of Biscay, with floor-to-ceiling windows framing the sea and the city of Donostia / San Sebastián below. Outdoor seating lets guests feel the coastal breeze, while the interior keeps the focus on the landscape and the plate. It is an exclusive space designed for both lunch and dinner, with a chef’s table for those who want to watch the kitchen at work.
Rubén Trincado grew up in the kitchens of Mirador de Ulía. His cooking is rooted in tradition and family, but he does not shy away from innovation. “Cooking is my soul, it’s not a job, it’s a way of life,” he says. That philosophy shows in every dish. The cuisine is Basque at heart, with techniques that respect the product while adding a contemporary edge. The result is a gastronomic experience that surprises without losing its sense of place.
Two tasting menus guide the meal. The “ARRAIGO” is the house degustation, starting with long-fermentation sourdough breads served with olive oils and white miso butter. The “VÍNCULO” is a vegetarian alternative. Both can be paired with wines selected to complement each course. The kitchen focuses on seasonal ingredients and clear flavors, letting the quality of the produce speak.
Mirador de Ulía’s commitment to quality has earned it a place on Michelin’s recommended list. It is a mark of consistency and ambition, and one that fits naturally with the restaurant’s quiet confidence. Whether you come for the food, the view, or both, this is a place that delivers on its promise.
