The story
In El Puerto de Santa María, Cádiz, Aponiente is the expression of chef Ángel León’s lifelong obsession with the ocean. Known as “the Chef of the Sea,” León works with marine species that were once discarded or even unknown to humans. He has introduced phytoplankton as a new ingredient and, for the first time in history, cultivated the sea grass Zostera marina. The restaurant’s motto, “una fantasía,” captures the spirit of inspiration and play that drives his cooking.
Aponiente’s kitchen is a laboratory for sustainable gastronomy. León’s research into new ingredients reduces fishing pressure and promotes a more responsible use of the ocean. This commitment earned him the first Michelin Green Star in Spain in 2019, alongside three Michelin Stars held since 2017. In 2023, the FAO named him a Food Hero for his work. The restaurant’s approach is not about novelty for its own sake—it’s about finding value in what the sea offers, from phytoplankton to eelgrass, and transforming it into something extraordinary.
The menu, named “APONIENTE’26,” offers a tasting journey that reflects the tides and the local marine ecosystem. Guests can choose between the Bioluminiscencia menu and the Degustación menu, each paired with Diatomea wine pairings. The setting, in a restored tide mill on the banks of the Guadalete River, adds to the sense of being immersed in the sea’s rhythms. Every dish is a conversation with the ocean, served with the precision and elegance that define a three-star experience.
