The story
On the southern coast of La Palma, within the protected landscape of the Salinas de Fuencaliente, El Jardín de la Sal sits between white salt flats and black volcanic rock. Open since September 2013, the restaurant is part of the same family-run saltworks that have worked these pans for generations. The setting is both dramatic and serene – a place where the restaurant’s architecture respects the natural reserve, and the views stretch across the Atlantic to the lighthouse of Fuencaliente.
The kitchen is led by head chef Juan Carlos Rodríguez Curpa, a local talent who trained at the IES Virgen de las Nieves and later at the regional Parador. His motto, written on the kitchen wall, is “Cocina con alma, sentimiento y corazón” – cooking with soul, emotion and pluck. That philosophy translates into a contemporary Canarian cuisine that draws directly from the island’s larder: La Palma cheeses (DOPQ), local honeys, and fish landed at the small pier beside the lighthouse. Curpa shows particular skill with less commercially popular species – escolar, halibut, beltfish, hairtail – transforming them into refined dishes.
Given the restaurant’s location within the saltworks, it is no surprise that salt plays a starring role. Curpa uses the kitchen as a laboratory for aromatic salts: flor de sal with black olives, baby squid ink, lime, and early tests on liquid salts and a modern take on garum. The tasting menu, available by prior reservation, offers the fullest expression of this exploration. The restaurant also caters to gluten-free and vegetarian diners, and the dining room, seating 80, has a pleasant, seafood-inspired atmosphere.
In 2026, El Jardín de la Sal was awarded a Michelin Bib Gourmand, a distinction that celebrates good-quality, good-value cooking. The award reflects the restaurant’s ability to deliver thoughtful, ingredient-driven contemporary Canarian cuisine in a setting that feels both authentic and effortlessly welcoming.
