The story
On a quiet street in Fuengirola, Bodega Charolais has been serving a distinct blend of Basque and Andalusian cooking since 1994. Founded by Florentino Morillo Doblas, a student of the celebrated Basque chefs Miriam and Pedro Bolinaga, the restaurant carries the precision of northern Spain while honouring the traditional recipes of Floren’s family from Humilladero in Andalusia. The result is a kitchen rooted in two rich regional cuisines, where market-fresh produce is treated with respect and a light, innovative touch.
Charolais is not a single room but a series of spaces, each with its own character. The main restaurant is an intimate setting with cosy corners, where chefs Juan Ojeda Lanzas and Jose Francisco Orsiel Cabeza prepare dishes that balance tradition with modern flair. For a more informal meal, the tapas section offers a lively, contemporary atmosphere with a wide selection of small plates, wines by the glass, and cavas – all at an approachable average price of €15. In summer, the terrace opens up, wrapped in Andalusian greenery and glazed in winter, serving both the full restaurant menu and lighter bites. There is also a private event room with its own wine cellar, suitable for parties with live music.
