The story
Forty years ago, entrepreneur Fabián Tobalina opened a restaurant on Gorbea Street in Vitoria. On March 31, 1976, Restaurante Andere began serving high-level cuisine built on seasonal produce and quality service. The concept proved so successful that in 1985 Tobalina expanded the original 200 square metres to more than 1,000, adding the capacity to host large celebrations without sacrificing detail.
Today, Andere holds a Michelin Recommended distinction, a mark of the consistent excellence that has defined the house from the start. The kitchen centres on a charcoal grill – the “parrilla” – that gives meats and vegetables a deep, smoky character. Diners can explore these flavours through a tasting menu that changes with the seasons. One recent evening began with a charcoal-grilled vegetable dish accompanied by celery root cream and seasonal truffle, followed by grilled scallop with lime, shallot, chive, and a smoked butter sauce. The traditional txangurro a la Donostiarra appeared with a light cod foam; then came grilled bacalao with garlic cream. A glazed squab with its own jus, black garlic cream, and French shallot preceded a lemon tart on a sablé base with toasted Italian meringue.
Beyond the set menu, the à la carte selection offers classic Basque dishes, and the wine and cocktail lists provide carefully matched pairings.
