The restaurant’s philosophy is direct: use traditional Japanese techniques, apply them to the best Cantabrian seafood, and season the result with Mediterranean recipes. “We respect the raw ingredient and its seasonality. That way, the simple can become wonderful,” the team states, setting the tone for a kitchen that prizes clarity over complexity.
The guiding concept is omakase—placing your trust in the chefs. At Fūmu, that trust is placed in Alvaro Gragera and Carlos Fraguas, who design the menu around what the market and the sea deliver each day.
