The story
Normal is the Roca brothers’ most personal project. Joan, Josep and Jordi – the trio behind the legendary El Celler de Can Roca – have created a restaurant that strips away complexity to celebrate the intuitive, fire-driven cooking they grew up with. The kitchen works with live flames, slow stews, and the aromas of a cuisine that “comes from far away.” The result is food that is direct, spontaneous, and deeply satisfying. As they put it, Normal dresses itself in “pause, joy, succulence, flavourfulness.”
The restaurant’s soul is its team, led by head chef Elisabet Nolla. The Roca brothers describe Normal as a tribute to the matriarchs of their family: from grandmother Angeleta to Montserrat, and now to Nolla, who carries the legacy forward. The menu changes with the seasons, drawing on produce from their own garden and the surrounding Catalan landscape. Dishes are built around bold, clear flavours – charcoal-grilled vegetables, rice with cuttlefish and seasonal mushrooms, or a dry-aged beef Wellington with café de Paris sauce.
Josep Roca, one of the world’s most respected sommeliers, curates the wine list. It champions the peasant culture of the Empordà region, with every local producer represented, alongside bottles from Beaune and other villages chosen “at the beat of the heart.” It is a list that feels both rooted and adventurous.
The space, designed by Andreu Carulla, is a study in warmth and restraint. Natural materials, clean lines, and organic forms create a serene, welcoming atmosphere. The design values craftsmanship and sustainability, offering a calm counterpoint to a fast-paced world.
Normal’s honest, flavour-driven approach has earned it a Michelin Recommended distinction for 2026 – a fitting acknowledgement of a kitchen that proves excellence can be found in the simplest, most normal things.
