The story
Since 1985, Francisco Martín and Rosa Macías have run Bar FM on Avenida Juan Pablo II in Granada. What began as a modest local bar has become a reference point for Andalusian seafood, earning a Michelin Recommended distinction in the 2026 guide. The couple’s dedication to sourcing the finest fish and shellfish directly from the lonja in Motril sets the tone for everything they do.
Rosa Macías is the force behind the stove. The journalist Carlos Herrera called her cooking “the simplicity of excellence,” and Ferrán Adriá has declared that “the best fritura is also haute cuisine.” José Andrés went further, saying the place should have a Michelin star without a doubt. The daily selection from Motril includes whatever is freshest – often simply fried or grilled, letting the quality of the ingredient speak. This is Andalusian cooking at its most honest.
The bar is small, with counter seating and a few tables, so booking ahead is essential. The atmosphere is lively and unpretentious, driven by a passion for product and service. Complementing the seafood is a cellar of over 650 wine references, carefully chosen to match the food. Dani García, another Michelin-starred chef, calls Bar FM “the place where many people who love good food make a pilgrimage.”
Bar FM remains a family-run affair, rooted in the local community and the traditions of the Andalusian coast. Its Michelin Recommended award simply confirms what regulars have known for decades: this is one of Granada’s essential dining experiences.
