The story
At María de la O, the kitchen begins with the sauce. Chef Chechu González, a Granada native, trained at the Escuela de Hostelería Hurtado de Mendoza before refining his craft at the Basque Culinary Center in San Sebastián. His philosophy is clear: “We create the sauce, then the dish.” Inspired by the rich culinary traditions of Granada and Andalusia, his cooking is built around painstakingly crafted broths and the concept of cocina ácida — acidic cuisine — where sauces define every plate.
The restaurant, which earned a Michelin Recommended distinction for 2026, offers two tasting menus that explore the region’s character. “Granada y sus raíces” is a full journey through multiple courses, while “Granada y su tradición” presents a shorter, equally refined experience. Both showcase the chef’s modern Andalusian cuisine, rooted in local ingredients and a creative, sauce-driven approach.
Sommelier Daniel Castro designs pairings that tell a story. Two wine routes accompany the tasting menu: the Route of the Caliphate, evoking the history of Al-Andalus, and the Route of the Alpujarras, celebrating the mountain region’s authenticity. Head of service José Luis Gamarra coordinates the front-of-house, ensuring that every detail — from the first gesture to the last — contributes to a memorable meal.
Chechu González describes his team as family, grounded in solidarity and empathy. It is this combination of technical skill, local pride, and personal warmth that makes María de la O a standout in Granada’s dining scene.
