The story
Tucked away in the center of Ibiza town, Omakase by Walt is an intimate Japanese omakase sushi bar. Behind a ten-seat wooden counter, Chef Walter Sidoravicius presents an Edomae-style tasting menu, each dish prepared meticulously in front of the guests. This private atmosphere, combined with the chef’s singular focus, creates an authentic and exclusive dining experience.
Chef Walter’s journey to Ibiza is rooted in a deep dedication to the art of sushi. Born in Venezuela with European roots, his passion for Japanese cuisine led him to Tokyo, where he lived for several years. He trained at Nobu, refining his technique under a traditional philosophy of discipline and precision. In 2014, he was a finalist at the World Sushi Cup. After working internationally and collaborating with the Basque Culinary Center, he opened Omakase by Walt in 2021—the first omakase sushi restaurant on the island. This level of craftsmanship earned the restaurant a Michelin star, recognizing its high-quality cooking.
The seasonal menu is a carefully curated sequence of dishes, balancing traditional Edomae techniques with a personal touch. Each plate is the result of a meticulous selection of ingredients. A special selection of Japanese sake is offered to perfectly accompany the meal, enhancing the harmony of flavors. The experience is designed to feel like a direct transport to Japan, emphasizing immediacy—guests are encouraged to eat each dish as it is served to capture the perfect balance and freshness.
Attention to detail extends to every aspect of the evening. The experience lasts approximately two and a half hours, with all guests served simultaneously. The restaurant asks diners to arrive on time and to be mindful of strong scents, as the aroma of the food is part of the experience. Photography of the dishes is welcome, as long as other guests are not included.
