Grussaute, a French chef born in Bordeaux, carries a career shaped by stints at Relais & Châteaux properties and kitchens in France, Africa, and Scotland. At Unic, he synthesises those influences into a cuisine that the restaurant describes as "cutting-edge" yet rooted in Ibiza's traditions. The phrase that recurs most on their website is "0 km by conviction": Grussaute works with small local growers, farmers and fishing guilds to source ingredients that might otherwise be forgotten. The sweet landscape includes fermented honey and fresh flowers. A vegetarian alternative is available.
For those preferring a plant-focused experience, the Ibizan Garden Menu (€145) celebrates the island's vegetables and foraged ingredients, with dishes like salicornia curry and celeriac carbonara with ceps cream. And the "La Xanga" Tasting Menu rounds out the offering, described by one guest as "impressive" and "magic".
The cooking is precise and layered, balancing French technique with Mediterranean cuisine – a style that feels contemporary but never tricksy. Each course respects the ingredient first.
