Here, the menu is built for sharing: choose freely from sections dedicated to aperitifs, raw preparations, fried bites, grilled dishes, and “Pour Le Plaisir” – all ciselés au gré des saisons.
One of Gaua’s signatures is the dry-aged fish technique. The kitchen ages fish in controlled conditions to concentrate flavour without drying it out, preserving the freshness while adding depth and a slightly denser texture. The result is an intensified aroma that pairs naturally with the grill’s smoky notes.
Gaua offers two distinct dining spaces. At the wooden and stone tables, you sit with a direct view into the open kitchen – the pulse of the house. Alternatively, the lounge area invites you to sink into armchairs and sofas for a more relaxed, unpretentious evening. Both revolve around the bar, where Paul the barman and Guillaume the sommelier create cocktails and guide wine pairings.
Gaua’s philosophy is rooted in the Basque-French gastronomic tradition – a region known for its chefs who reinvent daily. “Manger pour nous c’est plus que manger ! c’est un voyage rempli de nuances, de couleurs et de saveurs.” This spontaneous, ingredient-driven approach earned Gaua a Michelin Recommended distinction, recognising its ability to balance conviviality with precision in every plate.
