The story
In Hondarribia, just outside Irun, Sutan is an asador that grounds its cooking in the landscape of the Bidasoa region. The philosophy is direct: source ingredients from the immediate surroundings, respect their seasonality, and bring them to the fire. Products are marinated in local Txakoli before hitting the parrilla, a gesture that ties the kitchen to the vineyards of the Basque coast.
The restaurant’s home page speaks plainly of a "cocina del Bidasoa basado en la proximidad y temporalidad de los productos llevados directamente a la parrilla." The menu follows this logic. A meal begins with an aperitif, then moves to starters like revuelto de hongos asados a la parrilla (scrambled eggs with grilled mushrooms) and vieira a la parrilla sobre emulsión de almendra tierna (grilled scallop on a soft almond emulsion). The grill course offers a fish of the day and a txuleta de vaca vieja Txogitxu – a mature beef chop from a respected local producer. Accompaniments are simple: patatas fritas and a lettuce salad with spring onion. A sorbete of Txakoli Hiruzta, mint and ginger cleanses the palate before a caramelised brioche torrija.
Sutan’s commitment to the craft of grilling and its clear regional identity earned it a place in the Michelin guide, recognised as Recommended. The restaurant also serves as a venue for weddings and events, with a space set in nature that can host up to 200 guests.
