MangasVerdes is the dream of Emilio Martin and Francisco Cuadros. Emilio brought a deep-rooted knowledge of Jaén's hospitality scene, built over years in the family business. Francisco's path was different: a longtime cooking enthusiast, he trained at Le Cordon Bleu and honed his skills in Madrid at the acclaimed El Club Allard. Their complementary talents merge in a cuisine that draws on Jaén's home recipes while adding unexpected twists and occasional nods to dishes from around the world.
Step inside and the setting is vintage, with noble woods and warm lighting creating an atmosphere that feels both distinguished and welcoming. Counter dining, a terrace, and a cosy room for private parties mean there's a table for every mood. The space is small but thoughtfully designed—a backdrop that lets the food speak.
Modern cuisine here is not about abstraction; it is about flavour and generosity. The menu starts with the "despensa", where authentic Iberian flavours set the tone. Entrantes might include a burrata with mango guacamole and edamame, or a delicate zucchini carpaccio with feta, sundried tomato, and nuts.
