The story
On the outskirts of Javea, along the road to Benitachell, BonAmb offers a dining experience that is both deeply rooted in its Mediterranean landscape and constantly evolving. The restaurant describes its current season, "Caleidoscopio," as a time of transformation—a sensory journey where each dish is a fragment of color, taste, and memory that reshapes itself before your eyes. This concept is the heart of the restaurant's acclaimed cuisine.
Chef Alberto Ferruz leads the kitchen, drawing inspiration from the fragments of the Marina Alta: its elements, ingredients, and memories. His cooking transforms these pieces into patterns that are ancestral, familiar, yet unexpected. The menu is not a fixed set of dishes but a living composition that evolves, reflecting the emotions of the season. Guests can choose between the "Fragmentos" menu, a nine-course exploration, or the more expansive twelve-course "Caleidoscopio," both of which can be paired with wines selected by the expert team.
The dining room, overseen by maître Pablo Catalá, is designed to envelop guests in an atmosphere that enhances the meal. The restaurant’s own words speak of a "cocina donde los elementos, la luz, el producto y la emoción crean nuevas formas"—a kitchen where elements, light, produce, and emotion create new forms. This philosophy has earned BonAmb two Michelin stars, a recognition of its excellent cooking and the powerful, singular experience it offers. It is a place where the landscape of Javea is not just a view, but a central ingredient.
