A New Chapter on the Arenal

Tosca first opened its doors on Javea’s seafront in 2006, but the restaurant’s current identity was forged in May 2019. That’s when longtime employees Ferrán Ayora and Julien Buyle took over the reins, shifting the focus toward seasonal, locally sourced ingredients and a more personal, attentive style of service. The result is a restaurant that feels both rooted and refreshingly contemporary.

Three Menus, One Evolving Kitchen

The kitchen, led by chef Julien Buyle, builds on a Franco-Belgian foundation adapted to the Mediterranean. The menu is now built around three tasting experiences: the Sun Menu (€45, available Tuesday to Friday at lunch), the Moon Menu, and the Eclipse Menu (€121). Each evolves with the seasons and the market. Two dishes that have earned particular praise are the roasted sea bass with wild fennel and the Chateaubriand in a salt crust — both are part of the Moon Menu.

The Eclipse Menu is a more ambitious affair, beginning with four snacks (including a Gillardeau oyster with “Tosca Gin” and a foie gras sandwich with mistela) and moving through four starters, two main courses, and two desserts. Standouts include the baby artichoke from Tudela with clochina, wagyu cecina and sweet potato, and the range chicken “Label Rouge” with green asparagus and morel harlequin.

A Wine List That Matches the Ambition

Sommelier Ferrán Ayora has curated a wine list that spans both Spanish and international labels. Each tasting menu can be paired with a selection designed to enhance the dishes, and the list is divided into sections for whites, rosés, cavas, and reds, as well as a dedicated “Wines CV” selection from the region.

A Terrace Overlooking the Bay

Tosca sits on the Arenal promenade, across from the Parador and alongside the Marina Nou Fontana channel. The terrace offers views of the bay and a relaxed, airy atmosphere. Inside, the dining room is intimate and modern, with a focus on comfort and detail. The restaurant is wheelchair accessible.

A Michelin-Recommended Address

Tosca’s commitment to quality and evolution has been noted by the Michelin Guide, which awarded it a Recommended status in 2026.
