Tsuro is a Japanese restaurant in Jerez de la Frontera that draws from the traditions of sushi bars and omakase, with a subtle Nikkei influence. The founders describe it as “the passage that connects Jerez with Japan” – a space where the two worlds meet, not through fusion gimmicks, but through careful technique and respect for ingredients.

The Omakase Experience

The core of Tsuro is the omakase menu, meaning “I leave it to you.” Each evening, the chef designs a sequence of 14 to 16 courses based on the best produce available that week. The cooking follows the Kai Zen philosophy – constant pursuit of perfection through meticulous handcraft. The result is a meal that changes daily, shaped by what the market offers.

The Setting

Tsuro is the first restaurant in Jerez to offer only eight seats at the counter. This layout ensures direct contact between chef and diner, separated only by the bar where every dish is prepared. The intimacy allows for real-time adaptation – the chef can read reactions and adjust the pace or flavour. The service runs about three and a half hours, with a show cooking start an hour before the meal begins.

The Pairings

The wine list reflects the restaurant’s dual identity. Alongside sake imported from Japan, Tsuro features a carefully selected range of Jerez wines – from manzanilla to amontillado – as well as sparkling wines from the region. The collaboration with Equipo Navazos brings unusual bottlings like the Colet Navazos Brut Nature, finished with a touch of amontillado and palo cortado. This cross-cultural pairing is one of the restaurant’s signatures.

Recognition

In 2026, Tsuro earned a Michelin Recommended distinction, a nod to its commitment to quality and its singular approach in Jerez.
