The story
Cabanas, in the centre of Lalín (Pontevedra), has been a reference for updated traditional Galician cuisine since 2001. The restaurant was founded by Áurea and José Luis, who sought to create a space dedicated to quality produce and meticulous craft. In 2019, their daughter Carlota took over the family business, maintaining the essence while adding modern touches.
The kitchen focuses on a "cocina tradicional actualizada" – traditional cooking without pretension, with touches of modernity and a strong reliance on seasonal, local ingredients. This approach earned Cabanas a Michelin Recommended distinction, a recognition of its consistent quality and refined execution.
Cabanas is particularly known for its Cocido de Lalín, a classic Galician stew that the restaurant helped popularise nationally and internationally. The dish features meats from mother sows, cured, smoked, and salted, accompanied by grelos (turnip tops), boiled potatoes, chickpeas, and chorizo. The restaurant has even taken the Cocido to Madrid, Andorra, and the Vatican.
The wine list is a point of pride, with over 1,500 references. Carlota, who was awarded the Premio Juli Soler at Madrid Fusión 2024 as one of Spain's future wine talents, prioritises small producers, especially from Galicia, alongside international selections. The bodega is an integral part of the dining experience.
Cabanas offers several independent dining rooms that can be combined or kept separate, accommodating different group sizes and events. The restaurant also provides catering services and delivery of its famous Cocido. This is a place where tradition and quality are taken seriously, but the atmosphere remains welcoming and focused on the enjoyment of the customer.
