The story
Borja Marrero was born in the mountain village of Tejeda, Gran Canaria. After training at the Hofmann school in Barcelona, he worked in the kitchens of Ferran Adrià, Arzak and Ramón Freixa. He later spent years in Mexico City, running his own restaurant and a television cooking show. But he returned to his roots, first with the sustainable project Texeda, then with Muxgo.
Muxgo’s cooking is rooted in the island’s landscape. The restaurant sources from local producers and draws from its own organic farm, Finca Borja Marrero. Marrero describes his approach as “a cuisine of territory, sustainable and responsible” – one that respects tradition while innovating with natural ingredients. Dishes are not conceived in the kitchen first, but in the field.
Muxgo earned the first Michelin Green Star in the Canary Islands in 2023 for its commitment to sustainability, local sourcing and closed-loop production. In 2024, it received a Michelin One Star, alongside a Repsol Sol. The Michelin guide now awards it a single star (2026 edition), confirming the high quality of its cooking.
Set inside the Hotel Santa Catalina Royal Hideaway in central Las Palmas, Muxgo offers two tasting menus. “Los Orígenes” pays homage to traditional Canarian recipes, while the contemporary menu explores new textures and flavours. Each course is a reflection of the island’s produce, presented with precision. The dress code is formal, and the atmosphere is one of quiet elegance.
