The story
In Las Palmas de Gran Canaria, Tabaiba offers a dining experience rooted in the island’s landscape. The restaurant takes its name from a native Macaronesian plant, a choice that reflects its philosophy: a deep connection to local character, Canarian roots, and a close relationship with the origin of its ingredients.
The kitchen is led by Chef Abraham Ortega, whose culinary story began at home, learning from his mother and grandmothers. Those memories of family flavours continue to inspire his work, giving guests a high-cooking experience built on recognisable, familiar tastes. After training at the Hotel Escuela de Canarias and working across mainland Spain and Europe, Ortega returned home. His restaurant was recognised by the Michelin Guide with a Bib Gourmand in 2020, an achievement that spurred him to create this, his most personal project. Tabaiba now holds a Michelin star for high-quality cooking, a testament to the team’s vision.
The restaurant describes its cuisine as “Canarian evolutionary” – avant-garde, transgressive, and chaotic, yet never forgetting the humble origins of Canarian gastronomy. Sustainability and maximum respect for the product are central. The young, passionate team brings this spirit to life, crafting a menu that changes with the seasons.
Diners choose between two set menus: the Tabaiba menu, available at any time, and the Experience menu, served during specific lunch and dinner slots. The restaurant is an intimate space, accepting tables of a maximum of four guests, and is not suited for children under ten. There is no dress code – guests are encouraged to come as they feel comfortable.
