Today, at the foot of the city’s magnificent cathedral, chef Juanjo Losada and head of service Yolanda Rojo are writing a new chapter. Their project is a thoughtful renovation of traditional Leonese cooking, one that has earned them a Michelin star and a reputation for cooking that is both rooted and refined.
The guiding philosophy is simple: "naturally Leonese cuisine." This means a deep commitment to the produce of the surrounding province.
