The story
In Miranda de Ebro, Alejandro Serrano has created a restaurant that feels like a personal archive of happiness. Growing up in the family restaurant, he watched with wonder. Today, that wonder has evolved into a project rooted in his birthplace, where every dish is an edible expression of his most cherished moments.
Serrano’s style is unmistakable: a vibrant connection to the art world, a signature presence of pink, and a surprising reliance on seafood as the backbone of his menu—despite the inland location. His cooking is a form of Modern Cuisine that tells stories through color and flavor. Vegetables and aromatic herbs from the surrounding landscape meet the marine world, resulting in plates that are both expressive and respectful of tradition.
The restaurant offers two tasting menus, Bosque Marino S and Bosque Marino L, both described as colorful and surprising. They focus on the narrative behind each ingredient, turning the meal into a journey through Serrano’s life. For a more casual option, the daily menu El Bosque is also available. This focused, personal approach earned the restaurant a Michelin star, a recognition that feels like a natural extension of the chef’s dedication to happiness and expression at the table.
