The story
In the coastal town of Mogán, on the island of Gran Canaria, Los Guayres presents a dining experience that reinterprets the classic flavors of the Canary Islands. The kitchen describes its cooking as "open to the world, respectful of the product, honest, and full of flavors." This philosophy earned the restaurant a Michelin star in 2026, a recognition of its high-quality cooking.
The menu is a tasting journey through the region's bounty, with dishes that balance refinement and tradition. Diners can choose from three lengths: the Tasting Menu (€130), the Classic Tasting Menu (€140), or the Great Tasting Menu (€150), each with an optional wine pairing. The pairings feature six, seven, or eight glasses of wine respectively, selected to complement the progression of courses.
Among the dishes you will find scarlet prawn with "macho" vinegar and salpicón vinaigrette, sea urchin with apple and sea grape, bluefin tuna with beetroot and lupin beans, and baby squid with caramelised onion and royal custard. Wreckfish appears with pil-pil emulsion, sancocho, and watercress. The meat courses include suckling pig with potatoes and corn, and in the longer menus, goat with black trumpet mushrooms and celeriac bulb. Desserts are playfully named: Croissant, popcorn and goat's milk; Cherry tomatoes with Tahitian vanilla, Flor cheese and basil; and pistachio among the petit fours.
The setting is sophisticated yet welcoming, with options for indoor and outdoor seating. The restaurant also offers a chef's table experience, allowing guests to watch the team at work.
