The story
In the quiet parish of Ortiguera, in the Asturian council of Coaña, Ferpel Gastronómico offers a refined take on contemporary cuisine. The restaurant earned a Michelin star for 2026, a recognition that speaks to the kitchen’s ambition and quiet confidence.
The single tasting menu, called Figueira, is the only way to dine here – a deliberate choice that lets the chef control every course. Priced at €128 per person, it can be elevated with a wine pairing for an additional €60. The dishes read like a tour of the region’s larder, transformed through modern technique.
The meal opens with an oyster from the nearby Eo estuary, pickled in cider vermouth and capped with capers. Then a parade of small plates arrives: toasted corn papas with yogurt and popcorn powder; sardine cured in salt and sugar, smoked, and paired with guacamole and trout roe; a creamy chorizo sausage from Lebredo; and a rabbit stew scented with chocolate. At the table, a butter made from Tom’s cow’s milk, smoked muil cheese, a maize cake with onion and bacon, and a riff on Asturian arroz con pitu – rice with chicken.
The main courses continue the dialogue between land and sea: pigeon brined with anchovy, grilled, and served with sardine broth; a platter of Cantabrian lobster, goose barnacles, cockles, and codium seaweed in a cream of sea nettle; grilled baby gem lettuce with a nut vinaigrette and nettle ice cream; line-caught fish pan-fried with pumpkin and shrimp; cauliflower toasted in butter with grated black truffle; and a loin of venison with chestnut cream and demi-glace. Desserts finish with sour apple textures, a version of classic cheesecake, and a chocolate ganache with almond crumble, sponge cake, and María cookie ice cream.
The setting is understated, with outdoor seating for warmer days. Meals are served Tuesday to Saturday for lunch, and Saturday evenings for dinner. Ferpel Gastronómico is a place where the ingredients of Asturias – from ocean to pasture – are treated with the respect they deserve, and the Michelin star simply confirms what the plate already makes clear.
