The story
At Miguel González in Ourense, the kitchen works without a fixed script. Chef Miguel González describes his approach as “culinary improvisation” – a daily challenge built on three questions: “Where do they live, what do they eat, and where are we?” Each morning, he receives whatever the market, the fish market, or a local farmer brings, and only then decides what to cook. The result is a contemporary cuisine that changes constantly, driven by the best of the vegetable garden, the sea, and the livestock.
González credits chefs Pedro Subijana and Jacques Maximin among the masters who shaped his style, and his time spent in their kitchens is evident in the technical precision and respect for product that define his cooking.
The restaurant offers four tasting menus, each named after a Galician river or a classical muse. The Menú Auria (€85) introduces the chef’s improvisational style, while the Menú Cloe (€110) and the Menú Laia (€130) progress through more elaborate courses. A Menú infantil (€55) is also available. No two visits are the same – the dishes evolve with the season and the day’s catch.
Miguel González’s commitment to spontaneous, market-led cooking earned it a Michelin star in 2026. The star is a natural fit for a restaurant where the kitchen’s sole rule is to let the product speak. The dining room, a “dream house” on Avenida de Pontevedra, offers a serene setting for this ever-changing, contemporary dining experience.
