The story
Nova, in the centre of Ourense, calls its cooking cocina de raíces – a cuisine rooted in the gastronomic traditions passed down by previous generations. The guiding principle is freshness, and every ingredient is chosen to contribute to the whole. The kitchen works with seasonal produce from the surrounding countryside and the Galician coast, respecting the ephemeral nature of each product.
The offering changes weekly, based entirely on what is at its peak. Three tasting menus are available: Raíces (8 courses, 65 €), Nova (10 courses, 80 €), and Cima (13 courses, 105 €). Each begins with aperitivos, moves through entradas, a fish course, a meat course, and finishes with a pre-dessert, dessert, and petits fours. The Cima menu also includes a selection of Galician cheeses. All menus can be paired with wines from a carefully curated cellar.
Nova was born from the dream of two Ourense-born chefs, Julio Sotomayor and Daniel Guzmán. Their commitment to product and technique has earned the restaurant a Michelin star, a testament to the high quality of their contemporary cuisine. The space itself is modest and discreet, letting the food and the silence of a well-made meal speak.
