The story
In the village of Outes, in the province of A Coruña, chefs Fernando and Eva have transformed an old family grain-drying barn into a restaurant that feels both rooted and contemporary. The space, once used to store and dry cereal after the harvest, has been rehabilitated with respect for its original architecture. Today, its stone walls and the traditional hórreo (raised granary) on the property are quiet emblems of a philosophy that values origin and seasonality above all else.
The kitchen is guided by what the couple calls "natural gastronomy." There is no à la carte menu. Instead, the experience is built around a single tasting menu called Colleita (Harvest), which changes with the rhythms of the land and sea. The core of the cooking comes from their own vegetable garden, which supplies roughly 80% of the produce that appears on the plate. Working in close collaboration with local producers, the team crafts a sequence of appetizers, seven courses, and two desserts that place vegetables at the centre. The menu is priced at €70 per person and is designed to be a slow, sensory journey through the surrounding landscape—its aromas, colours, and traditions.
The wine list, drawn mainly from small, personal projects in Galicia, is selected to accompany the rhythm of the meal without overpowering the ingredients. The dining room itself is an extension of this ethos: a space for quiet enjoyment, where the service is attentive but natural, putting the story of each dish into context.
This commitment to sustainability and the deep connection between kitchen and garden has earned the restaurant a Michelin Recommended distinction. It is a recognition that aligns perfectly with O Secadeiro’s vision of a cuisine that is both modern and deeply tied to the Galician countryside.
