Just outside Oviedo, in the small town of Posada de Llanera, Arraigo is the kind of place that makes you reconsider what a meal can be. Here, Ángel and Omar — chef and head of service — run a kitchen that moves at its own pace. Their philosophy is built on three pillars: the best possible product, sourced as close to home as possible; slow cooking that respects the integrity of ingredients; and a deep, unpretentious love for the land. “We are rural,” they say. “We love the countryside and cooking without hurry.”

This is contemporary cooking that feels rooted in tradition. The menu changes with the seasons, drawing on a 400-square-metre garden in Arlós, just three kilometres from the restaurant. There they grow tomatoes, peas, piparras, aubergines, and other vegetables as the year dictates. That garden is not just a gimmick — it reflects a genuine commitment to real sustainability, circular economy, and support for local producers. The result is a cuisine that is personal, recognisable, and deeply flavourful.

The kitchen crew’s training is evident: they have worked alongside chefs such as Pepe Rodríguez (El Bohío), Jordi Vilá (Alkimia), Pedro Martino, and Esther Manzano. After nine years running Restaurante Carulo in Oviedo, Ángel and Omar launched Arraigo with a clear vision. “Our main differentiator is the cooking,” they explain. “Our cooking, personal and recognisable.” Their approach is a market-driven, current cuisine that looks to the past for inspiration — celebrating old dishes through modern techniques and conservation.

The recognition of a Michelin Recommended award in 2026 confirms what regulars already know: this is a kitchen that values fondo y sabor — depth and taste — above all. The atmosphere is warm and unhurried, with a sala that is honest, professional, and empathetic.
